Some of the dishes, like the chiles rellenos have been modified to make them wheat free and many of the plates are ideal for people on gluten free diets, such as our tacos served on homemade corn tortillas and the tamales, which are the only tamales available in the region that are made starting with organic corn kernels that are soaked overnight, peeled and ground on the premises, before making the masa (dough) that wraps around the delicious fillings. Finally, the tamales are cooked in small batches throughout the day to maintain their freshness and flavor.
